A simple and delicious way of cooking Aloo Palak


This stir-fried Aloo Palak is a simple, wholesome and delicious dish that Indians enjoy at home. It can be quickly made with minimal ingredients and served in a number of ways to eat. You can cook it at home and enjoy it with rice and dal, some roti and sweet yogurt for lunch or with hot parathas for breakfast. No matter what time of the day you eat it, it gives you the comfort that many rich and fancy dishes sometimes fail to offer. Ingredients to cook


  • 2 large potatoes (cut into medium size cubes)

  • 2 large cups spinach (blanched and pureed)/ 3-4 cups spinach (chopped and washed)

  • 1 large onion (chopped)

  • 5-6 sliced garlic cloves  

  • 2-3 green chili (slit from the middle)

  • 1 tsp cumin seeds

  • ½ tsp asafoetida 

  • ¼ tsp turmeric 

  • 1 tbsp coriander powder 

  • ¼ cup fresh cilantro (chopped)

  • 1 tsp Kashmiri red chili powder

  • Salt to taste 

  • Oil for cooking


Cooking Guide 


  1. In a pan, heat some oil and toast the cumin seeds and asafoetida. 

  2. Stir for a minute on low heat and then add sliced garlic and onions. Sauté the onion and garlic on a medium flame for 1-2 minutes until the onion gets soft and its color slightly changes.

  3. Now add green chilies and toss in the potatoes after a few seconds. Add some salt and ¼ cup of water and cover the lid to cook the potatoes on medium-low heat. Cook the potatoes covering the lid for the next 10-12 minutes while stirring once or twice so the potatoes don't stick to the bottom. (Use some more water if needed)

  4. Once the potatoes are cooked, add in the spices - red chili, dried coriander powder and turmeric. Give it a good stir. 

  5. Add spinach and mix them well. Stir aloo-palak for the next 3-4 minutes until the spinach is cooked. 

  6. Turn off the flame. Serve aloo palak in a bowl and sprinkle some cilantro over it. Enjoy it with your favorite Indian bread.
