Ingredients Required

For Marinade:

  • 21 oz chicken (boneless)

  • ¼ cup hung yogurt (or Greek yogurt)

  • 2 tbsp minced ginger-garlic paste

  • 1 tsp red chili powder

  • 1 tsp garam masala powder

  • Salt to taste

For the curry:

  • 10-15 whole cashews

  • 2 tbsp ginger-garlic minced

  • 1 large onion (chopped)

  • 4 large tomatoes (chopped)

  • 1 cup heavy cream

  • 1 tsp Kasuri methi

  • Butter for stir-frying

  • 1 tsp garam masala

  • 1 tsp Kashmiri red chili powder

  • ¼ tsp turmeric

  • 2 tsp coriander powder

  • 1 tsp cumin powder

  • Salt to taste

Cooking Method

  1. In a bowl, mix chicken with other marinade ingredients and mix well. Now set it aside for an hour.

  2. Take a pan, add some butter and leave cashews in it and fry it for a few seconds. Now take the cashews out in a bowl and stir fry chicken in the same pan for 5 minutes on medium heat. Transfer the chicken to another bowl.

  3. Heat some more butter in the same pan, add ginger garlic paste and stir it for a minute on medium-low heat. Now add onions and sauté until golden and then add tomatoes. Add in Kashmiri red chili powder, turmeric, coriander powder, cumin powder and salt and cook for 4-5 minutes.

  4. Turn off the flame and let the mixture cool. Then blend the mixture in a blender with roasted cashews to get a smooth sauce. Heat the same pan and put back the sauce into the pan. Add half a cup of water and let the mixture come to a boil (You can get the desired consistency by adding more or less water).

  5. Pour the cream into the mixture with garam masala and crushed Kasuri methi and mix nicely. Now add the seared chicken and let it simmer on low heat for 5 minutes by stirring it once or twice in between.

  6. When the sauce gets thick and creamy, remove it from the flame. Serve it in a bowl garnish with a few cilantro leaves and enjoy with butter naan.
